Homemade Limoncello

Ingredients

  • 12 beautiful ripe lemons
  • 1 litre of vodka
  • 750 g sugar
  • 500 ml water

Directions

  1. When buying the lemons, ask for those with edible peel (bio). Wash them in cold water and use a potato peeler because you need only the peel, without the white part from the interior.
  2. In a big jar, put the peels with the vodka, cover with a plastic bag and a rubber band, and leave it for a week in a dark cool place. Now, the alcohol will extract the volatile oils.
  3. When the week passed, it’s time to make the sugar syrup. Put the water and the sugar in a pot on medium to low heat and stir until the sugar is dissolved. Let it cool off and pour it into the jar, and back to the cool dark place for two months.
  4. When it’s ready, sieve it and bottle it. As a side note, the last time I made it without letting enough the syrup to cool off and the only difference is that the end product is transparent instead of foggy. PS: You can apply the same method for other citrus, like oranges, grapefruit, blood oranges and so on.
